halloween pumpkin slutty brownies

It's spooky season (well, a little belated) but these treats were the most important thing that I've done in the last week. I have approximately 1023 cans of pumpkin in my house that I'm trying to use (pumpkin waffles, pumpkin bread, pumpkin chocolate chip pancakes, etc). It's also football season (go Pats!), and from years of flutes bringing Oreo brownies to high school football games, I now strongly associate Oreo brownies with fall.
So, how can I combine pumpkin and oreo brownies? Slutty brownies. PUMPKIN slutty brownies, with the wonderful artificially-colored orange Halloween oreos.
Before you yell at me, I didn't come up with this term. A slutty brownie is cookie on the bottom, oreo in the middle, and brownie on the top. Here's the best answer that I can find on the internet as to why they're called slutty brownies:
"They’re oh so easy, and more than a little bit filthy." (yikes? let me know if you come up with a better name"
Without further ado, here's the recipe for Halloween Pumpkin Slutty Brownies
Pumpkin chocolate chip cookie dough ingredients (adapted from this recipe)
1 cup unsalted butter, cold and cut into cubes
3/4 c. brown sugar
1/2 c. granulated sugar
3/4 c. pumpkin purée
1 large egg
2 tsp. pure vanilla extract
2 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. pumpkin pie spice
1/2 tsp. kosher salt
2 c. semi-sweet chocolate chips (not gonna lie, I never measure chocolate chips and I just use 3/4 of the 12 oz bag)
Middle layer: 16 Halloween Oreos
Brownie ingredients
1/2 cup + 1 tbs coconut oil (vegetable oil is fine)
1 cup + 2 tbs white sugar
2 large eggs
2 tsp vanilla extract
1/2 cup all purpose flour
1/2 cup cocoa powder
1/4 tsp salt
Optional: however many chocolate chips you like. I like many.
Instructions
Preheat oven to 375 degrees Fahrenheit
Line a 8x8 inch baking pan with parchment paper
Make cookie dough first: Combine butter and sugars until light and fluffy, then add in pumpkin, eggs, and vanilla. After beating that, it will probably look curdled-- that is okay! Add in the rest of the ingredients (chocolate chips last) and mix until combined.
Use between 1/3 and 1/2 of cookie dough to press into pan. Freeze the rest or bake it into cookies.
Press 16 Oreos into cookie dough in pan. It should be 4 Oreos across by 4 Oreos down. If you're using a different sized pan, use whatever works, just cover the surface with Oreos.
Make brownie batter: Beat together sugar and oil, then add the eggs and beat until frothy. Add in rest of ingredients and mix until combined.
Spread brownie batter on top of Oreos.
Bake for 40-50 minutes; start checking at 35. How long you bake depends on how fudgy you like your brownies. Bake until you poke a knife in and it should come out a little dirty, but NOT batter-y. If you want less fudgy brownies, bake until the knife comes out clean.
Let rest for 20 minutes in pan before using the parchment paper to remove the brownies from the pan. If you can bear to wait, then I recommend waiting until they're completely cool before cutting into slices.
