St. Patrick's Day is here! A day to celebrate my Irish heritage and eat lots of carb-filled foods.


This is a recipe from a family friend, although I modified it to make it vegan. Feel free to un-veganize it. It's one of my favorite recipes, one that I know I'll be passing down to my kids (as my mother did to me). Best of all, it's super simple: basically a one-bowl recipe, doesn't require any fancy mixing equipment, and takes 10 minutes to put together.


Also, the best vegan butter is Miyoko's and you can't convince me otherwise.

Ingredients

  • 2 cups (480g) (almond/soy) milk

  • 2 tbsp vinegar

  • 4 cups (480g) AP flour

  • 1/2 cup (100g) sugar

  • 1/2 tsp salt

  • 1 tsp baking soda

  • 2 tsp baking powder

  • 1 tbsp cold (vegan) butter

  • Optional: 1-2 cups of raisins, chocolate chips, craisins, whatever your heart desires...

Topping

  • 1 tbsp melted (vegan) butter

  • 2 tsp sugar

Instructions

  1. Preheat oven to 375F.

  2. Measure out milk in a cup and add vinegar. Let sit for 10 minutes until it curdles.

  3. In a bowl, sift dry ingredients.

  4. Chop butter into small pieces and add to dry mix. If you're adding raisins/chocolate chips, add them now.

  5. Mix together lightly with a fork.

  6. Add milk and stir with a fork. Do not beat!

  7. Put in a greased & floured loaf pan.

  8. Pour melted butter over top and sprinkle with 2 tsp of sugar.

  9. Bake at 375F for 10 minutes, then reduce heat to 350F and bake for another 45-50 minutes, or until knife comes out of center clean.
